Many of our dishes are cooked in a tandoor which is barrel shaped, open topped clay oven fired by charcoal. Breads can be baked in a tandoor, as one can roast lamb or chicken.
Tandoori dishes are marinated in yogurt with appropriate herbs and spices and then cooked in tandoor, kept at a very high temperature with burning charcoal.
The radiant heat thus generated together with smouldering charcoal does the cooking. This process seals in the goodness and the smouldering charcoal also lends the food a very special flavour.
